A perfectly refreshing cold soy sauce somen that's ideal for summer. The special broth, rich with chicken stock and dashi, can be easily made in the microwave. The somen noodles can also be cooked conveniently in the microwave, making this a speedy recipe recommended even for busy days. Finish it off with aromatic toppings and sesame oil for a flavorful dish that you can slurp down even when you have no appetite.
Ingredients
Main Ingredients (1 serving)
- Somen noodles 100g
- Scallions 1 stalk
- Tenkasu (tempura scraps) (to taste)
Seasonings
- [A] Soy Sauce 1 tbsp
- [A] Sugar 1/2 tsp
- [A] Chicken stock granules 1/2 tsp
- [A] Dashi granules 1/2 tsp
- [A] Water 200ml
- [A] Sesame oil 1/2 tbsp
- [A] Black pepper (to taste)
Steps
- In a bowl, combine Chicken stock granules 1/2 tsp, Dashi granules 1/2 tsp, and Sugar 1/2 tsp. Add 1 tbsp of water and mix well.
- Heat the soup base in the microwave at 600W for 20 seconds, then stir well to dissolve.
- Add 1 tbsp of Soy Sauce and the remaining water, and mix well.
- Cover with plastic wrap and chill thoroughly in the refrigerator until ready to use.
- Spread the 100g of Somen noodles evenly in a large microwave-safe bowl.
- Pour hot water to cover the somen noodles completely and loosen them with chopsticks.
- Loosely cover with plastic wrap and microwave at 600W for 2 minutes and 30 seconds.
- After heating, remove the plastic wrap, loosen the noodles again, and check for doneness.
- Drain in a colander and rinse under cold running water, then drain thoroughly.
- Add the drained somen noodles to the chilled soup.
- Add 1/2 tbsp of Sesame oil, Tenkasu (to taste), and Black pepper (to taste). Sprinkle with 1 chopped Scallion stalk.
