An easy and exquisite rice ball recipe using plenty of broccoli, simply mixed with cooked rice. Easily prepared in the microwave, the flavor of salted kelp and olive oil will whet your appetite. A healthy and satisfying dish perfect for busy lunches or bento boxes.

Ingredients

Main Ingredients (5 rice balls)

  • Broccoli 150g (approx. 1/2 head)
  • Cooked Rice 350g (approx. 2 bowls)
  • Salted Kelp 10g
  • Toasted Sesame Seeds 1 tbsp

Seasonings

  • Olive Oil 2 tsp
  • Salt 1/4 tsp
  • Minced Garlic 1 tsp

Steps

  1. Cut the florets and stem of 150g broccoli. Separate the florets into small pieces. Trim any bruised parts of the stem and dice it into 5mm cubes.
  2. Place the diced stem in a bowl, cover with plastic wrap, and microwave for 1 minute at 600W.
  3. After microwaving, place the florets in the same bowl and microwave for an additional 2 minutes.
  4. Once the broccoli is cooked, drain it in a colander and let it cool slightly. Once cooled, squeeze out any excess water thoroughly by hand.
  5. Crumble the cooked broccoli florets into bite-sized pieces by hand. (Key Tip!) Heating the broccoli first makes it easier to crumble and results in a neater finish.
  6. In a bowl, combine the crumbled broccoli, 10g salted kelp, 2 tsp olive oil, 1 tbsp toasted sesame seeds, 1/4 tsp salt, and 1 tsp minced garlic. Mix well. (Key Tip!) Mixing the ingredients and seasonings first helps distribute the flavor evenly when combined with the rice. (Note) Omit the minced garlic if you are concerned about the smell, such as when packing for a bento.
  7. Add 350g cooked rice to the broccoli and seasoning mixture. Mix everything thoroughly. If the taste is too bland, adjust with more salt.
  8. Shape the mixed rice into your desired form and press firmly. (Key Tip!) Since the broccoli can be crumbly, press firmly when shaping. This can also be enjoyed as a flavorful mixed rice.
