- Ground Pork and Beef Mix 150g
- Eggs (Medium) 3
- Snow Peas 6 pods
- Ground Chicken 150g
- Warm Cooked Rice (to serve)
Seasonings
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [A] Sugar 1 tbsp
- [A] Dark Soy Sauce 2 tbsp
- [B] Sugar 1 tbsp
- [B] Cooking Sake (Rice Wine) 1/2 tbsp
- [B] Salt a pinch
- [C] Grated Ginger 1/2 tsp
- Vegetable Oil (for cooking)
Steps
- Prepare 6 snow pea pods by removing strings and then blanching and slicing them diagonally.
- In a bowl, combine the seasonings for the ground meat: 1 tbsp Cooking Sake (Rice Wine), 1 tbsp Mirin (Sweet Rice Wine), 1 tbsp Sugar, and 2 tbsp Dark Soy Sauce. Mix well.
- In a separate bowl, whisk together 3 Medium Eggs with 1 tbsp Sugar, 1/2 tbsp Cooking Sake (Rice Wine), and a pinch of Salt to create the egg mixture.
- Heat oil in a frying pan over medium heat. Add 150g of Ground Pork and Beef Mix (or 150g of Ground Chicken) and stir-fry until crumbly.
- Once the color of the ground meat changes, add the prepared ground meat seasoning and cook until the liquid has evaporated.
- Remove the cooked ground meat to a plate and wipe the frying pan clean. Pour in the egg mixture and scramble, stirring with chopsticks, until your desired consistency is reached.
- Serve warm cooked rice in bowls. Top with the ground meat mixture, scrambled eggs, and blanched snow peas for a colorful presentation. Enjoy!
