Ingredients
Main Ingredients (2 servings)
- 4 potatoes
- 1/4 onion
- 100g mixed ground meat
- 50cc milk
- 2 tbsp flour
- 1 egg
- Panko breadcrumbs to taste
Seasonings
- Salt to taste
- Pepper to taste
- Frying oil to taste
Steps
- Peel 4 potatoes and remove any eyes.
- Finely chop the potatoes so they cook quickly.
- Add 20-30cc of water to a container with the chopped potatoes and microwave (600W) for about 5 minutes. Adjust the cooking time based on the potato's condition. 【The Trick Here!】 Adding a small amount of water creates a steaming effect, resulting in a moist finish.
- While the potatoes are cooking, finely chop 1/4 onion.
- Lightly oil a frying pan and sauté the finely chopped 1/4 onion.
- Once the onion becomes soft, add 100g of mixed ground meat and stir-fry.
- Lightly season the stir-fried mixed ground meat and onion with salt to taste and pepper to taste. 【The Trick Here!】 Season lightly here as you will adjust the flavor again after adding the potatoes.
- Combine the cooked and softened potatoes with the stir-fried mixed ground meat and onion in a bowl and mash with a masher. 【The Trick Here!】 Whether you leave some small chunks of potato or mash them completely is up to your preference.
- Add 50cc of milk to the mashed potatoes and minced meat.
- Mix everything together and season with salt to taste and pepper to taste. 【The Trick Here!】 Ensure the potato flavor comes through well.
- Wait for the croquette mixture to cool down to room temperature.
- Make the batter. Mix 2 tbsp flour and 1 egg in a bowl. You will adjust the consistency with water later.
- Once the croquette mixture has cooled, shape it into your desired size. 【The Trick Here!】 For bento boxes, bite-sized pieces or hiding cheese in the center are recommended.
- Dip the shaped croquette mixture into the batter.
- Thoroughly coat the battered croquette with panko breadcrumbs to taste.
- Heat frying oil to 170°C (338°F).
- Fry the croquettes in the hot oil. Fry about 3 croquettes at a time as a guideline.
- Once the croquettes are golden brown and crispy, remove them from the oil.
- Enjoy while piping hot.
