- Rice Noodles 1 bundle
- Onion 80g
- Watercress 30g
- Shredded Melting Cheese 80g
Seasonings
- White Sesame Oil 1 tbsp
- Cooking Sake (Rice Wine) 1 tbsp
- Oyster Sauce 1 tsp
- Sichuan Peppercorn (Hua Jiao) A pinch
Steps
- Heat 1 tbsp White Sesame Oil in a frying pan and stir-fry 80g sliced Onion.
- Once the onion is softened, add 1 tbsp Cooking Sake (Rice Wine), then add 190ml Water and bring to a boil.
- When boiling, add 1 bundle Rice Noodles, cover with a lid, and simmer over medium heat for 2 minutes.
- After 2 minutes, remove the lid and stir the rice noodles to loosen them.
- Add 1 tsp Oyster Sauce and A pinch of Sichuan Peppercorn (Hua Jiao), and mix well.
- Cover again with the lid and simmer for 2 minutes.
- After simmering for a total of 4 minutes, add 30g torn Watercress and stir-fry, allowing it to absorb the moisture.
- In a separate frying pan, spread 80g Shredded Melting Cheese evenly and heat over low heat.
- Once the cheese has melted and is bubbling, place the stir-fried rice noodles on top of the cheese and spread them evenly.
- Cover with a lid and cook for about 1 minute.
- Use a rubber spatula to carefully peel the cheese from the edges. Once the entire piece can move, flip it onto a plate with the cheese side facing up. This is the key step! Since the cheese contains salt, do not add extra salt and adjust the flavor with oyster sauce.
