Seasonings
- Sesame oil 2 tbsp
- Sugar 1 and 1/3 tsp
- Red chili peppers 2 (sliced)
- Chinese seasoning 1 and 1/2 tsp
- Salt 2 pinches
- MSG(Ajinomoto) (MSG) 4 dashes
- Chili oil 1 tsp
Steps
- Separate the tip and base parts of 230g bamboo shoots.
- Slice the tips a bit thickly to retain their texture.
- Slice the base parts as thinly as possible. 【Tip!】 Slicing the tips thickly and the bases thinly creates textural variety, making it more delicious overall.
- Add 2 tbsp sesame oil to a frying pan and stir-fry the sliced 230g bamboo shoots over medium heat. 【Tip!】 Check the ingredients list of store-bought menma; using more sesame oil enhances richness and flavor.
- Add 1 and 1/3 tsp sugar and 2 sliced red chili peppers and stir-fry.
- Add 1 and 1/2 tsp Chinese seasoning and mix well.
- Add 4 dashes MSG(Ajinomoto) (MSG) and stir-fry.
- Add 2 pinches salt to season. 【Tip!】 Stir-fry over low to medium heat, just enough to warm through without browning, being careful not to overcook.
- Pack the stir-fried bamboo shoots into a clean jar. Leave the lid open until they cool down.
- Add 1 tsp chili oil and mix everything to combine. 【Tip!】 Adding chili oil enhances the flavor and spiciness, making it more similar to store-bought menma.
- Once cooled, close the lid and store in the refrigerator. 【Tip!】 Using clean chopsticks to serve will help it last for about 1 week in the refrigerator.
