A simple-to-make, incredibly delicious Mah-La-Gao that you'll want to eat by the handful, cooked right in your frying pan. Using a milk carton as a mold, you can enjoy a rich, sweet and savory, fluffy batter. Try this indulgent sweet perfect for snacks or brunch!

Ingredients

Main Ingredients (1 cake (approx. 15cm diameter))

  • 2 Eggs
  • 70g Brown Sugar
  • 2 tbsp Vegetable Oil
  • 3 tbsp Milk
  • 100g Cake Flour
  • 4g Baking Powder

Seasonings

  • 1/2 tsp Soy Sauce

Steps

  1. Cut the opened milk carton sides into three 3cm wide strips.
  2. Join the cut milk carton strips with staples to form a 15cm diameter circle.
  3. Cut the remaining milk carton into a 17.5cm square.
  4. Place the circular mold in the center, fold the four corners inwards, and secure with staples.
  5. Line the inside with parchment paper to complete the milk carton mold.
  6. In a bowl, combine 2 eggs, 70g brown sugar, 2 tbsp vegetable oil, 3 tbsp milk, and 1/2 tsp soy sauce, then mix well.
  7. Sift in 100g cake flour and 4g baking powder, and gently mix until just combined without overmixing. [Key Tip!] Overmixing will result in a dense batter, so mix lightly to maintain a fluffy texture.
  8. Pour the batter into the prepared mold.
  9. In a deep frying pan or pot, place a base to keep the mold from floating, and then place the mold on top.
  10. Pour hot water around the edges until it just reaches the bottom of the mold.
  11. Cover with a lid wrapped in a kitchen towel, and steam over high heat for 20 to 25 minutes.
  12. Insert a bamboo skewer to check for doneness.
