These 'Golden Ham Sweet Potato Bites' are a sweet and savory treat using seasonal sweet potatoes. They are bite-sized and perfect for lunchboxes. Made easily with a microwave and frying pan, they are also a lifesaver on busy days.
Ingredients
Main Ingredients (2 servings)
- Sweet Potato 100g
- Onion 30g
- Ham 5 slices
- All-purpose flour (as needed)
- Egg 1
- Vegetable Oil (as needed)
Seasonings
- Mayonnaise 2 tbsp
- Mustard Paste 1 tsp
- Salt (to taste)
Steps
- Cut 100g of sweet potato into 1cm cubes.
- Soak the cut sweet potatoes in water for about 10 minutes to remove bitterness.
- Peel and finely chop 30g of onion.
- Drain the sweet potatoes and place them in a microwave-safe container.
- Cover with plastic wrap and microwave on 600W for 2 minutes and 30 seconds.
- Mash the microwaved sweet potatoes with a fork or masher.
- While the sweet potato is still warm, add the finely chopped onion and mix well. (This is the secret!) The heat from the sweet potato will cook the onion slightly, removing its pungency and resulting in a delicious finish.
- In a separate bowl, combine 2 tbsp of mayonnaise, 1 tsp of mustard paste, and a pinch of salt, and mix well.
- Spread 1/5 of the sweet potato and onion mixture onto one side of 5 slices of ham and fold them over.
- Cut the folded ham in half.
- Lightly coat the cut side of the ham with all-purpose flour (as needed).
- Heat vegetable oil (as needed) in a frying pan over medium heat.
- Dip the floured ham into 1 beaten egg and arrange them in the frying pan.
- Once browned, flip them over and cook until both sides are golden brown.
- After browning both sides, dip them into 1 beaten egg again and cook. (This is the secret!) The egg acts as a coating, preventing the bites from falling apart and ensuring a beautiful finish.
- Once browned on both sides, remove to a plate.
