Steps

  1. Slice 10g garlic thinly for the sauce.
  2. Slice 10g ginger thinly for the sauce.
  3. Pound the 1000g spare ribs with a meat hammer or prick all over with a fork. 【Tip!】 Pounding helps the flavor penetrate better.
  4. In a bowl, add the sauce ingredients: 4.5 tbsp ketchup, 3 tbsp soy sauce, 3 tbsp Worcestershire sauce, 3 tbsp honey, 1.5 tbsp sake, 1 tbsp lemon juice, and 14 dashes Tabasco.
  5. Grate the thinly sliced 10g garlic and 10g ginger, add to the bowl from step 4, and mix well. 【Tip!】 This is a versatile sauce that goes well with other ingredients like chicken.
  6. Place the spare ribs in a baking dish and thoroughly rub the prepared BBQ sauce all over them. 【Tip!】 The meat around the bones is rich in gelatin, giving it a melting texture when cooked.
  7. Once the sauce is rubbed into the spare ribs, marinate them in the refrigerator for at least 30 minutes.
  8. Line a baking sheet with parchment paper and arrange the marinated spare ribs. 【Tip!】 Place them on their sides, not bone-down, to ensure they cook evenly.
  9. Cut 2 potatoes into wedges.
  10. Season the cut potatoes with salt and pepper to taste and olive oil to taste, then place them in the empty spaces on the baking sheet with the spare ribs.
