- Cut the pumpkin into 1-3cm cubes.
- Peel the skin off the cut pumpkin.
- Place the pumpkin in a microwave-safe bowl.
- Cover with plastic wrap and microwave for 3 minutes at 600W.
- Add sugar and salt to the microwaved pumpkin and mash with a fork or masher.
- Add potato starch and mix everything together.
- Take the mixture in your hands, roll it, and shape it into balls about 2cm wide.
- Lightly coat the rolled pumpkin mochi with potato starch.
- Heat about 5mm depth of vegetable oil in a frying pan over medium heat.
- Place the pumpkin mochi in the frying pan and cook, turning them, until golden brown all over.
- Once browned, remove the pumpkin mochi from the pan and drain the oil.
