  1. Cut the pumpkin into 1-3cm cubes.

  3. Place the pumpkin in a microwave-safe bowl.
  4. Cover with plastic wrap and microwave for 3 minutes at 600W.
  5. Add sugar and salt to the microwaved pumpkin and mash with a fork or masher.
  6. Add potato starch and mix everything together.
  7. Take the mixture in your hands, roll it, and shape it into balls about 2cm wide.
  8. Lightly coat the rolled pumpkin mochi with potato starch.
  9. Heat about 5mm depth of vegetable oil in a frying pan over medium heat.
  10. Place the pumpkin mochi in the frying pan and cook, turning them, until golden brown all over.
  11. Once browned, remove the pumpkin mochi from the pan and drain the oil.
  12. Transfer to a plate and serve. The trick here is the perfect balance of the pumpkin's sweetness and the crispy outside, chewy inside texture. It's incredibly easy to make delicious treats with just a few simple ingredients.
