A superb Beef and Scallion Yaki Udon recipe that's easy to make with just meat and scallions. Even using frozen udon results in a chewy and fragrant dish with an authentic taste you can enjoy at home. It's the perfect dish for busy days.
Ingredients
Main Ingredients (2 servings)
- Beef (thinly sliced) 150g
- Frozen Udon Noodles 2 servings
- Scallions, thinly sliced 2-3 stalks
- Pickled Red Ginger (Beni Shoga), to taste
- Bonito Flakes (Katsuobushi), to taste
- Egg Yolks 2
Seasonings
- [A] Cooking Sake (Rice Wine) 2 tbsp
- [A] Soy Sauce 3 tbsp
- [A] Mirin (Sweet Rice Wine) 1.5 tbsp
- [A] Sugar 1.5 tbsp
- Vegetable Oil, for cooking
Steps
- Take Frozen Udon Noodles (2 servings) out of the package and microwave to heat.
- Finely slice 2-3 stalks of Scallions.
- Heat Vegetable Oil (for cooking) in a frying pan and quickly stir-fry Beef (thinly sliced) (150g) until it changes color. (Key Tip!) Overcooking the beef will make it tough, so cook it for a short time.
- Add Sugar (1.5 tbsp), Mirin (Sweet Rice Wine) (1.5 tbsp), Soy Sauce (3 tbsp), and Cooking Sake (Rice Wine) (2 tbsp) to the stir-fried beef and simmer until reduced.
- Add the microwaved udon to the frying pan, let it absorb the sauce while evaporating the moisture, then grill until completely cooked and browned. (Key Tip!) Unlike yakisoba, with frozen udon, it's best to let the flavor soak in before grilling.
- Add 2/3 of the sliced Scallions to the frying pan and lightly cook until softened.
- Plate the yaki udon.
- Generously top with the remaining Scallions, and serve with Egg Yolks (2), Pickled Red Ginger (to taste), and Bonito Flakes (Katsuobushi) (to taste) as desired. Enjoy!
