These easy-to-make yet incredibly delicious red ginger pork skewers are made with thinly sliced pork and red ginger. They can be fried with minimal oil and are perfect as a snack or a side dish. Marinating the pork with seasoning makes it tender, and the refreshing flavor of red ginger will whet your appetite.
Ingredients
Main Ingredients (2 servings)
- Thinly sliced pork belly 200g
- Red ginger 20g
- Egg 1
- Panko (Breadcrumbs) (to taste)
Seasonings
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] All-purpose flour 1 tbsp
- [A] Salt and pepper (to taste)
- [B] Water 1 tbsp
- [B] All-purpose flour 3 tbsp
Steps
- In a bowl, add thinly sliced pork belly 200g and mix in Cooking Sake (Rice Wine) 1 tbsp, all-purpose flour 1 tbsp, and salt and pepper (to taste).
- Add red ginger 20g and mix everything together.
- Take the pork in your hands, lightly form it into a ball, and shape it into a log.
- Skewer the pork onto a bamboo skewer, shaping it as you extend it into a log. [Key Tip!] If the pork pieces are large, you can cut them with scissors or tear them with your hands to form them.
- In a separate bowl, whisk together egg 1 and water 1 tbsp until well combined.
- Add all-purpose flour 3 tbsp and mix until there are no lumps to create the batter.
- Dip the log-shaped pork into the batter, then coat thoroughly with panko (breadcrumbs) (to taste). [Key Tip!] Using batter helps the breadcrumbs adhere easily, resulting in a beautiful finish even with minimal oil.
- Pour about 1cm of frying oil into a frying pan and heat it to medium temperature (it should sizzle and float when you drop a breadcrumb into it).
- Once the oil is heated, carefully place the pork skewers into the pan.
- Fry over medium to medium-high heat for 4-5 minutes, flipping them halfway through, until they are golden brown all over.
- Once fried, remove them from the pan and drain any excess oil.
- Arrange on a plate. Serve as is, or with your favorite vegetables, sauce, or mayonnaise.
