A chewy corn lasagna made with dumpling wrappers and the microwave. The exquisite combination of seasonal corn, chicken thighs, onions, and white sauce, along with the perfect pairing with cheese, makes this a delightful and budget-friendly recipe that's easy to make with simple ingredients.

Ingredients

Main Ingredients (2 servings)

  • Corn 1 cob
  • Onion 1/4 (60g)
  • Chicken Thigh 100g (1/3 piece)
  • Butter 10g
  • All-purpose Flour 2 tbsp
  • Milk 200ml
  • Dumpling Wrappers 24 sheets
  • Mixed Cheese
  • Dried Parsley

Seasonings

  • Granulated Consommé 1 tsp
  • Soy Sauce 2 tsp
  • Salt and Pepper (to taste)

Steps

  1. Peel off the dirty outer layers of 1 corn cob, quickly rinse it under water, and wrap it in plastic wrap.
  2. Microwave the corn on 600W for 5 minutes and let it cool down. [Key Tip!] Microwaving with the husk on steams it, enhancing its sweetness.
  3. Finely chop 1/4 onion (60g).
  4. Finely chop 100g (1/3 piece) chicken thigh.
  5. In a heatproof bowl, place the chopped onion followed by the chopped chicken thigh. Cover with plastic wrap and microwave on 600W for 2 minutes 30 seconds.
  6. While the chicken is hot, break it apart and mix in 10g butter until melted.
  7. Add 2 tbsp all-purpose flour to the mixture and stir until no lumps remain.
  8. Add 200ml milk and mix well.
  9. Microwave for 6 minutes. Stir once during heating to prevent lumps and continue until thickened.
  10. Once thickened, add 1 tsp granulated consommé and 2 tsp soy sauce. Mix well and season with salt and pepper to taste.
  11. Remove the plastic wrap and husk from the cooled corn.
  12. Cut the corn in half lengthwise, then cut each half in half again widthwise.
  13. Carefully scrape the kernels off the cob by pushing them down. [Key Tip!] This method cleanly removes the kernels.
  14. Add the removed corn kernels to the white sauce. Reserve a small amount for garnish.
  15. Mix the added corn thoroughly into the sauce.
  16. Spread the mixed white sauce evenly in a gratin dish.
  17. Lightly moisten dumpling wrappers with water, then layer them two at a time on top of the white sauce.
  18. Continue layering the white sauce and dumpling wrappers alternately until the dish is filled.
  19. Once the dumpling wrappers and white sauce are layered, scatter the reserved corn on top.
  20. Sprinkle mixed cheese over the top.
  21. Bake in a toaster or broiler on medium heat for about 10 minutes, or until golden brown. [Key Tip!] If the cheese starts to burn, cover with aluminum foil. If the dumpling wrappers are not cooked through, heat them in the microwave before serving.
  22. Once golden brown, sprinkle with dried parsley to finish.
