Ingredients

Main Ingredients (4-5 servings)

  • Beef Ribs 500g
  • Onion 1/2
  • Celery 1/2 stalk
  • Carrot 1/2
  • Parsley 2 sprigs
  • Garlic 1 clove
  • Basil 1 tbsp
  • Capers 1/2 tbsp
  • Dill Pickles 1 small
  • Green Olives 5-6
  • Anchovy Fillets 3
  • Breadcrumbs 1/2 slice
  • Thinly Sliced Pork Belly 200g (approx.)

Seasonings

  • Bay Leaf 1
  • Thyme 1 sprig
  • Black Peppercorns 5-6
  • Salt (to taste)
  • Water 1.8 liters
  • [A] Olive Oil 4 tbsp
  • [A] White Wine Vinegar 1 tbsp
  • Pepper (to taste)

Steps

  1. Prepare the ingredients for the basil sauce. Gather basil, garlic, anchovies, green olives, dill pickles, onion, white wine vinegar, olive oil, salt, and breadcrumbs.
  2. Add 1/2 slice of breadcrumbs, torn into pieces, to a food processor. Add 1 clove of garlic and 2 tbsp of onion.
  3. Add 1 tbsp of white wine vinegar and 4 tbsp of olive oil, and process briefly.
  4. Add the remaining 1 tbsp of basil, 2 sprigs of parsley, 1/2 tbsp of capers, 1 small dill pickle, 5-6 green olives, and 3 anchovy fillets to the food processor. Process further while observing the consistency.
  5. Transfer the processed sauce to a bowl and taste. Season with salt and pepper. Adjust acidity by adding 1 tbsp of white wine vinegar. Note: Since many salty ingredients are included, use only a small amount of salt. Adjust acidity with white wine vinegar if needed.
  6. Slice the braised beef ribs while they are still warm but not hot.
  7. Arrange the sliced beef ribs on a plate and drizzle with olive oil.
  8. Generously top the arranged beef ribs with the prepared basil sauce.
  9. Blanch the thinly sliced pork belly.
  10. Place the blanched pork belly in a bowl, add the prepared basil sauce, and mix briefly.
  11. Arrange sliced onion generously on a plate, then top with the basil sauce-mixed pork belly.
  12. Drizzle with olive oil for finishing.
  13. Remove the carrots, onions, and celery after they have been used for the broth.
  14. Cut the softened carrots into bite-sized pieces.
  15. Use about half of the onion, and remove the tough fibers from the celery before cutting.
  16. Cut the braised beef ribs into bite-sized pieces.
  17. Arrange the cut vegetables on a plate and sprinkle with salt.
  18. Place the cut beef on top of the vegetables and sprinkle with a little more salt.
  19. Finally, drizzle the prepared basil sauce over everything.
