Steps

- Cut the eggplants in half and then into 4 pieces each.

- In a bowl, combine 1 tbsp cooking sake, 1 tbsp mirin, 2 tsp soy sauce, 1/2 tsp Chinese soup paste, 1/3 tsp potato starch, and 8g grated ginger to make the ginger stir-fry sauce.
- Lightly pat dry the surface of the eggplants with a paper towel.
