A deeply flavored Chinese stir-fry made with just onions. Achieve a professional taste by stir-frying with an aromatic oil infused with chili and Sichuan peppercorns, then finishing with black vinegar. Ingredients
Main Ingredients (2 servings)
- New Onions 2 large
- Dried Red Chilies 4-5
- Whole Sichuan Peppercorns about 10
Seasonings
- Taihaku Sesame Oil 1.5 tbsp
- Salt to taste
- Black Pepper to taste
- Black Vinegar 5 tbsp
- Sugar a pinch
- Sesame Oil 1 tsp
Steps
- Trim the ends off the new onions.
- Cut the new onions in half.
- Slice the halved new onions to a thickness of 5mm.
- Drizzle 1.5 tbsp of Taihaku Sesame Oil into a frying pan.
- Add about 10 whole Sichuan peppercorns to the frying pan.
- Add 4-5 dried red chilies to the frying pan.
- Sauté over low to medium heat until fragrant and the chilies turn brownish.
- Add all the sliced new onions to the frying pan and stir-fry until coated with oil.
- Increase heat to medium and continue to stir-fry slowly. Key Tip: Since adding onions lowers the temperature, it's best to increase the heat to about 80% and stir-fry.
- Once the onions become tender, sprinkle in a pinch of salt and stir-fry.
- Add a pinch of black pepper.
- Add 5 tbsp of black vinegar and mix well. Key Tip: Stir-fry to bring out the aroma of the black vinegar.
- Add a pinch of sugar, if desired.
- Finish by drizzling 1 tsp of sesame oil and mixing everything together to complete the dish.
