A delicious cheesy baked pimento that even pimento haters will surely love. Simply stuff pimentos with a healthy mixture of firm tofu, tuna, and corn, then bake in a toaster. This easy recipe is also freezer-friendly and perfect for bentos.
Ingredients
Main Ingredients (2 servings)
- Bell Peppers 4 pcs
- Melting Cheese 40g
- Firm Tofu 100g
- Canned Tuna 1 can
- Corn 50g
- Potato Starch 1/2 tbsp
Seasonings
- Chicken Bouillon Powder 1/2 tsp
- Mayonnaise (to taste)
Steps
- Wrap 100g of firm tofu in paper towels, place a weight on top, and drain the water.
- Push down the stems of 4 bell peppers with your thumb, cut them in half, and remove the seeds and stems.
- Remove the paper towels from the drained firm tofu and pat it dry again.
- Place the drained firm tofu in a bowl and mash it.
- Add 1/2 tsp of chicken bouillon powder to the mashed tofu and mix well.
- Add 1 can of canned tuna and 50g of corn to the bowl and mix well.
- Finally, add 1/2 tbsp of potato starch and mix everything thoroughly.
- Stuff the prepared mixture into the cut bell peppers.
- Place 40g of melting cheese on top of the stuffing in the pimentos.
- Drizzle mayonnaise (to taste) over the cheese.
- Bake in a toaster until a golden brown color is achieved.
