- [A] Cooking Sake (Rice Wine) 2 tsp
- [A] Potato Starch 2 tsp
- [A] Salt (to taste)
- [A] Pepper (to taste)
- Dried parsley (to taste)
Steps
- Trim the stem from the eggplant (1 medium, approx. 150g) and make cuts about halfway to two-thirds deep, at 5mm intervals.
- Slice the eggplant into 1cm thick rounds at 5mm intervals. It should have a cut in the center.
- Soak the eggplant in water for about 5 minutes to remove bitterness.
- In a bowl, add pork slices (200g), then add Cooking Sake (Rice Wine) 2 tsp, Potato Starch 2 tsp, salt (to taste), and pepper (to taste).
- Mix the seasonings into the pork.
- Drain the eggplant that was soaked in water.
- Gently tuck the seasoned pork into the cuts of the drained eggplant. (Pro Tip: If the pork pieces are too large, tear them by hand and tuck them in.)
- Arrange the eggplant with the pork tucked inside onto a microwave-safe dish with some depth.
- Drizzle store-bought meat sauce (1/2 packet, approx. 100g) over the top.
