This recipe for "Melty Cheese Eggplant Meat" can be made entirely in the microwave, with no need to use the stove. Juicy pork pieces and melt-in-your-mouth eggplant are coated in store-bought meat sauce and gooey cheese for a feast-worthy dish. It pairs perfectly with rice or pasta, and can be easily made with minimal ingredients and simple steps.

Ingredients

Main Ingredients (2 servings)

  • Eggplant 1 medium (approx. 150g)
  • Pork slices 200g
  • Store-bought meat sauce 1/2 packet (approx. 100g)
  • Mixed cheese 40g

Seasonings

  • [A] Cooking Sake (Rice Wine) 2 tsp
  • [A] Potato Starch 2 tsp
  • [A] Salt (to taste)
  • [A] Pepper (to taste)
  • Dried parsley (to taste)

Steps

  1. Trim the stem from the eggplant (1 medium, approx. 150g) and make cuts about halfway to two-thirds deep, at 5mm intervals.
  2. Slice the eggplant into 1cm thick rounds at 5mm intervals. It should have a cut in the center.
  3. Soak the eggplant in water for about 5 minutes to remove bitterness.
  4. In a bowl, add pork slices (200g), then add Cooking Sake (Rice Wine) 2 tsp, Potato Starch 2 tsp, salt (to taste), and pepper (to taste).
  5. Mix the seasonings into the pork.
  6. Drain the eggplant that was soaked in water.
  7. Gently tuck the seasoned pork into the cuts of the drained eggplant. (Pro Tip: If the pork pieces are too large, tear them by hand and tuck them in.)
  8. Arrange the eggplant with the pork tucked inside onto a microwave-safe dish with some depth.
  9. Drizzle store-bought meat sauce (1/2 packet, approx. 100g) over the top.
  10. Cover with plastic wrap and microwave at 600W for 6 minutes.
  11. After heating, sprinkle mixed cheese (40g) evenly over the dish.
  12. Remove the plastic wrap and microwave at 600W for 1 to 1.5 minutes, or until the cheese is melted.
  13. Sprinkle with dried parsley (to taste) for garnish, and it's done!
