Simply marinate in sauce for a devilishly delicious taste! The crispy enoki mushrooms and spicy, yangnyeom-style sauce combine to create a dish that will keep you reaching for more rice and drinks. Perfect for meal prep or as a snack.

- Enoki Mushrooms 1 bag (200g)
- Scallions 2 stalks
Seasonings
- [A] Mirin (Sweet Rice Wine) 3 tbsp
- [A] Water 3 tbsp
- [B] Sugar 1 tbsp
- [B] Gochujang (Korean Chili Paste) 1 tbsp
- [B] Soy Sauce 1 tbsp
- [B] Ketchup 1 tbsp
- [B] Sesame Oil 1 tbsp
- [B] Grated Garlic 1 tsp
- [B] Toasted Sesame Seeds 2 tbsp
Steps
- Cut off the root ends of the enoki mushrooms, about 1cm, and trim the base.
- Break apart the enoki mushrooms into bite-sized pieces and place them in a microwave-safe container.
- Cover with plastic wrap and microwave on 600W for 2 minutes.
- Remove the microwaved enoki mushrooms, add 1 tbsp sugar and 3 tbsp mirin (sweet rice wine), and microwave again on 600W for 50 seconds. (This is the key!) This step evaporates the alcohol and dissolves the sugar, allowing the flavors to meld better.
- To the heated enoki mushrooms, add 1 tbsp gochujang (Korean chili paste), 1 tbsp soy sauce, 1 tbsp ketchup, 1 tbsp sesame oil, 3 tbsp water, 2 tbsp toasted sesame seeds, and 1 tsp grated garlic.
- Add 2 stalks of scallions, thinly sliced, and mix everything well.
- After mixing the seasonings and enoki mushrooms, cover and marinate in the refrigerator for 1 to 2 hours. (This is the key!) If marinating for more than 3 days, drain the excess liquid as the flavor can become too strong.
