An easy savory bread recipe using pancake mix and a rice cooker. Simply mix in chopped vegetables and sausages, then cook in the rice cooker to create a fluffy and chewy bread. We also introduce an arrangement where you top it with cheese and bake. This is a perfect dish for busy days or for households without an oven.
Ingredients
Main Ingredients (4 servings)
- Onion 1/2 (120g)
- Broccoli 1/2 small (100g)
- Sausages 3
- Whole Corn 1/4 can (50g)
- Egg 1
- Milk 50ml
- Pancake Mix 100g
- Mixed Cheese (optional)
Seasonings
- Salt and Pepper (to taste)
- Coarsely Ground Black Pepper (to taste)
- Vegetable Oil (thinly coated)
Steps
- Peel the onion and finely chop 1/2 (120g).
- Cut off the core of the broccoli and chop it finely. Separate the florets.
- Place the chopped onion and broccoli in a heatproof container, cover with plastic wrap, and microwave at 600W until cooked through. Let cool.
- Finely chop 3 sausages into cubes of about 3mm to 5mm.
- In a bowl, whisk together 1 egg, 50ml milk, and salt and pepper (to taste).
- Add 100g pancake mix and mix until just combined and no dry powder remains.
- Add 50g whole corn, the chopped sausages, and the cooled, drained vegetables to the bowl. Mix well.
- Add coarsely ground black pepper (to taste), if desired, and mix.
- Lightly grease the inside of the rice cooker pot with vegetable oil. Pour in the mixed batter and spread evenly.
- Cook using the standard white rice setting.
- Once cooked, insert a skewer to check if the batter sticks. If it's undercooked, reheat or cook again.
- Once fully cooked, carefully remove the bread from the rice cooker, being mindful of the heat.
- Cut the removed bread into approximately 6 to 8 equal portions.
- (Arrangement) Place the cut bread on aluminum foil with the un-toasted side facing up.
- Top with mixed cheese as desired, and bake in a grill or toaster oven until golden brown.
