Make this chewy, mochi-like "cheesecake" in just 5 minutes using only 2 ingredients and your microwave! It has a rich cheesecake flavor without any cheese, making it a perfect cool treat for summer. You can also dress it up with jam and crushed biscuits for a more festive look.

Ingredients

Main Ingredients (2 servings)

  • Cheesecake flavored soy milk 200ml
  • Potato Starch 3 tbsp
  • Biscuit 1 pc

Seasonings

  • Jam 1 tbsp
  • Water 1/2 tbsp

Steps

  1. In a microwave-safe bowl, add Potato Starch 3 tbsp.
  2. Gradually add Cheesecake flavored soy milk 200ml little by little while mixing to prevent lumps.
  3. Mix everything thoroughly until smooth and no lumps remain.
  4. Microwave on 600W for 1 minute 30 seconds.
  5. After microwaving, stir well until the hardened potato starch at the bottom dissolves.
  6. Continue microwaving in 30-second intervals, mixing well each time. This is the key! If lumps of potato starch form, it will affect the texture, so mash them out thoroughly until the mixture is smooth.
  7. Repeat the microwaving and mixing process a total of 6 times, until the mixture becomes elastic.
  8. Transfer the mixture to a bowl filled with ice water.
  9. While in the ice water, firmly squeeze the mixture with your hands to form it into round shapes and chill.
  10. If the shape of the mochi becomes distorted, microwave it again to soften, then knead and reshape. You can scoop it with a spatula and drop it into cold water to help with shaping.
  11. Once the mochi has cooled down, drain any excess water and arrange on a plate.
  12. Make the sauce. In a separate bowl, combine Jam 1 tbsp and Water 1/2 tbsp, and mix until the jam is loosened.
  13. Pour the jam sauce over the prepared mochi.
  14. Finely crush Biscuit 1 pc and sprinkle it over the mochi with jam sauce.
