A moist and tender, exquisite mayo chicken made with chicken breast and perilla leaves. The rich flavors of sweet miso sauce and mayonnaise spread, making it a perfect dish to enjoy with rice. It's also budget-friendly and ideal for bento boxes or snacks!

Ingredients

Main Ingredients (2 servings)

  • Chicken Breast 1 piece (350g)
  • Potato Starch 2 tbsp
  • Perilla Leaves 10 leaves

Seasonings

  • Cooking Sake (Rice Wine) 1 tbsp
  • Salt and Pepper (to taste)
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Miso 1 tbsp
  • [A] Sugar 1 tbsp
  • [A] Soy Sauce 1/2 tbsp
  • [A] Grated Garlic 1 tsp
  • [A] Grated Ginger 1 tsp
  • Mayonnaise
  • Toasted Sesame Seeds

Steps

  1. In a bowl, combine 2 tbsp Mirin (Sweet Rice Wine), 1 tbsp Sugar, 1 tbsp Miso, 1/2 tbsp Soy Sauce, 1 tsp Grated Garlic, and 1 tsp Grated Ginger. Mix well.
  2. Slice 1 Chicken Breast (350g) into two pieces, then cut into pieces about 1cm square.
  3. Mince the cut chicken breast with a knife until it's almost ground. [Key Tip!] Mince as finely as possible, as this will help create indentations later.
  4. Transfer the minced chicken breast to a bowl. Add 1 tbsp Cooking Sake (Rice Wine), Salt and Pepper (to taste), and 2 tbsp Potato Starch. Mix well until combined.
  5. Add 10 Perilla Leaves, with stems removed and finely chopped, to the bowl with the mixed chicken. Mix until evenly distributed.
  6. Lightly oil a frying pan.
  7. Take about 1 tbsp of the meat mixture and shape it into a ball. Place it in the frying pan and make a deep indentation in the center with your index finger. [Key Tip!] Lightly wetting your hands with water will prevent the mixture from sticking. Tapping it gently like making a hamburger will release air and create a nice shape.
  8. Arrange the shaped Oba Mayo Chicken in the frying pan and heat over medium heat.
  9. Once the pan is hot and you hear sizzling, reduce the heat to medium-low.
  10. Cover with a lid and cook over medium-low heat for 2 minutes and 30 seconds.
  11. Once one side is browned, flip them over.
  12. Cover and cook the other side.
  13. Once both sides are cooked through, re-mix the prepared sauce ([A] ingredients) and pour it into the frying pan. Cook over medium-low heat, allowing the moisture to evaporate, until the sauce coats everything evenly.
  14. Transfer the Oba Mayo Chicken coated with sauce to a plate.
  15. Spoon Mayonnaise into the indentation in the center and spread it evenly with a spoon.
  16. After adding the Mayonnaise, sprinkle with Toasted Sesame Seeds as desired, and it's ready to serve.
