This recipe uses a whole apple to create a versatile apple sauce that can be used in many dishes. It has a natural sweetness that's gentle on the body and can be used in stir-fries, as a hamburger sauce, or as a secret ingredient in drinks. It can be stored in the refrigerator for up to a week. Highly recommended for using up a large quantity of apples.

Ingredients

Main Ingredients (1 apple worth)

  • 1 Apple (approx. 280g net weight)
  • 150g Thinly sliced pork
  • Green onions, to taste
  • Store-bought hamburger patties, to taste

Seasonings

  • 100ml Water
  • 1 tbsp Lemon juice
  • 2 tbsp Cooking Sake (Rice Wine)
  • 3 tbsp Sugar
  • [A] Apple Sauce, 2 parts
  • [A] Cooking Sake (Rice Wine), 1 part
  • [A] Soy Sauce, 1 part
  • [B] Apple Sauce, 2 parts
  • [B] Cooking Sake (Rice Wine), 1 part
  • [B] Miso Paste, 1 part
  • Vegetable Oil, to taste
  • Salt, to taste
  • Garlic, to taste
  • Ginger, to taste

Steps

  1. Peel and core 1 Apple. Aim for 280g net weight.
  2. Slice the apple into roughly 1cm thick pieces and place in a pot.
  3. Add 100ml Water, 3 tbsp Sugar, 1 tbsp Lemon Juice, and 2 tbsp Cooking Sake (Rice Wine) to the pot.
  4. Bring to a boil over medium-high heat.
  5. Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
  6. Transfer the cooked apple to a bowl.
  7. Blend until it becomes a paste. [Key Tip!] If you don't have a blender, let it cool slightly and blend in a food processor or pass through a sieve.
  8. Return the pureed apple sauce to the pot.
  9. Stir occasionally to prevent burning, and cook over low heat for 10 minutes to evaporate excess moisture.
  10. After 10 minutes of cooking, it's done when it thickens enough to coat the back of a spatula.
  11. Transfer to a sterilized jar.
  12. Once cooled to room temperature, cover and refrigerate. Use within 1 week.
  13. [For Green Onion Pork Donburi] Mix 2 parts of the prepared Apple Sauce with 1 part Cooking Sake (Rice Wine) and 1 part Soy Sauce to make the Apple Soy Sauce.
  14. Heat Vegetable Oil in a frying pan over medium heat.
  15. Stir-fry 150g Thinly sliced pork over medium heat.
  16. Once the pork is cooked, add green onions and stir-fry.
  17. When the green onions are cooked, add the prepared Apple Soy Sauce. [Key Tip!] Adding garlic or ginger to taste will also result in a delicious dish.
  18. If the taste is too bland, adjust with salt.
  19. Serve over warm rice.
  20. [For Miso-Glazed Hamburg Steak] Mix 2 parts of the prepared Apple Sauce with 1 part Cooking Sake (Rice Wine) and 1 part Miso Paste to make the Apple Miso Sauce.
  21. Cook store-bought hamburger patties.
  22. Place the cooked hamburger patties in a pot, add a small amount of water, and simmer with the prepared Apple Miso Sauce.
  23. Plate the hamburger patties and pour the sauce over them.
