  • Enoki mushrooms 1 bunch (approx. 200g)
  • Onion 1/4 (approx. 60g)
  • White part of green onion 1/4 (approx. 60g)

Seasonings

  • [A] Mirin (Sweet Rice Wine) 3 tbsp
  • [A] Sugar 2 tsp (1 tsp for less sweetness)
  • [A] Water 3 tbsp
  • [A] Soy Sauce 2 tbsp
  • [A] Sesame Oil 1 tbsp
  • [A] Toasted Sesame Seeds 1 tbsp
  • [A] Grated Garlic 1 tsp
  • [A] Dried Chili Rings about 2 pinches

Steps

  1. Peel and finely chop 1/4 onion (approx. 60g).
  2. Place the chopped onion in a microwave-safe container.
  3. Add 3 tbsp Mirin (Sweet Rice Wine) and 2 tsp Sugar to the container with the onion and mix briefly.
  4. Cover loosely with plastic wrap and microwave for 2 minutes at 600W. (Key Tip!) Microwaving the onion removes its pungency, enhancing its sweetness and making it more palatable.
  5. Finely chop 1/4 white part of green onion (approx. 60g).
  6. To the container with the microwaved onion, add 3 tbsp Water, 2 tbsp Soy Sauce, 1 tbsp Sesame Oil, 1 tbsp Toasted Sesame Seeds, 1 tsp Grated Garlic, about 2 pinches of Dried Chili Rings, and the chopped green onion. Mix well.
  7. Trim the hard ends off 1 bunch of Enoki mushrooms (approx. 200g).
  8. Separate the enoki mushrooms into bite-sized pieces and place them in a microwave-safe container.
  9. Cover the container with enoki mushrooms with plastic wrap and microwave for 2 minutes at 600W.
  10. Thoroughly drain the excess water from the microwaved enoki mushrooms and transfer them to a storage container.
  11. Pour the prepared seasoning mixture over the enoki mushrooms in the storage container.
  12. Let the enoki mushrooms marinate in the seasoning for 30 minutes to 1 hour.
  13. Once the flavors have melded, the dish is ready. Serve over rice with a raw egg yolk, or enjoy in your favorite way.
  14. It is recommended to use the leftover marinade to stir-fry with meats such as pork belly or chicken.
  15. If the taste is too bland, adjust with salt and soy sauce.
