- All-Purpose Flour 1 tbsp
- Onion 1/2 medium (approx. 120g)
- Ginger 20g
Seasonings
- Cooking Sake (Rice Wine) 1 tsp
- Salt (to taste)
- Pepper (to taste)
- Vegetable Oil 2 tsp
- [A] Mirin (Sweet Rice Wine) 1.5 tbsp
- [A] Soy Sauce 1.5 tbsp
- [A] Sugar 2 tsp
Steps
- Peel and thinly slice 1/2 medium onion (approx. 120g).
- Peel and thinly julienne 20g ginger.
- In a bowl, mix together 1.5 tbsp Mirin (Sweet Rice Wine), 1.5 tbsp Soy Sauce, and 2 tsp Sugar.
- Season 200g Pork Belly Slices with 1 tsp Cooking Sake (Rice Wine), a pinch of Salt, and a pinch of Pepper. Massage to combine.
- If the pork slices are large, tear them into bite-sized pieces.
- Sprinkle 1 tbsp All-Purpose Flour over the pork and massage well to coat.
- Heat 2 tsp Vegetable Oil and the sliced ginger in a frying pan over medium heat.
- Sauté until the ginger becomes fragrant. (Key Tip!) Sautéing the ginger beforehand enhances its aroma, removes any harshness or bitterness, and makes it more palatable.
- Once the ginger is fragrant, remove it from the frying pan and set aside.
- Add the seasoned pork to the frying pan, spreading it out in a single layer.
- Stir-fry the pork until it just begins to change color.
- Return the reserved ginger to the pan along with the sliced onion. Stir-fry with the pork.
- Continue to stir-fry until the onion becomes tender and translucent.
- Mix the prepared sauce mixture well and pour it into the frying pan.
- Stir everything together, allowing the sauce to thicken and coat the ingredients.
- Plate and serve.
