Main Ingredients (Makes 6 muffins)
- Ham 2 slices
- Potato 1 (approx. 150g)
- Milk 150ml
- Hot Cake Mix 170g
- Mixed Cheese 30g
Seasonings
- Salt to taste
- Mayonnaise
Steps
- Finely dice the 2 slices of ham into 5mm cubes.
- Peel 1 potato (approx. 150g), remove any sprouts, and dice into 5mm cubes.
- Place the diced potato in a microwave-safe container, cover with plastic wrap, and microwave on 600W for 3 minutes.
- Set aside 1/3 of the microwaved potato for topping, and mash the rest with a masher.
- Mix 150ml of milk into the mashed potato.
- Add 170g of hot cake mix and stir until just combined, with no dry lumps remaining.
- Set aside 1/3 of the diced ham for topping, and add the remaining ham to the batter.
- Add salt to taste and mix.
- Preheat your oven to 180°C (350°F).
- Line a muffin tin with paper liners and divide the batter equally among the 6 cups.
- Evenly distribute the reserved ham and potato pieces over the batter in each muffin cup.
- Divide 30g of mixed cheese into 6 portions and sprinkle over the toppings, then drizzle with mayonnaise.
- Bake in the preheated 180°C (350°F) oven for 25-30 minutes.
- Once baked, they are ready to serve. The key is to mash some of the potato for a rich flavor and keep some diced for texture. The cheese and mayonnaise add richness and a savory aroma.
