  • Chicken Breast 1 pc (300g)
  • Potato Starch 2 tbsp

Seasonings

  • [A] Cooking Sake (Rice Wine) 1 tbsp

  • [B] Mayonnaise 2 tbsp
  • [B] Grated Garlic 2 tsp
  • [B] Whole Grain Mustard 2 tsp
  • [B] Sugar 1 tsp
  • [B] Miso 1 tsp
  • Dried Parsley (optional)

Steps

  1. Cut Chicken Breast (300g) in half lengthwise while leaving the skin on. Slice thinly to about 1cm thick. If the breast is large, cut it in half again and adjust to bite-sized pieces.
  2. Place the sliced chicken breast in a bowl. Marinate with Cooking Sake (Rice Wine) 1 tbsp and Salt 1/4 tsp, then let it sit for about 10 minutes. [Key Tip!] Marinating the chicken and then coating it with potato starch will result in a tender and moist texture, and the seasoning will also adhere better.
  3. In a separate bowl, combine Mayonnaise 2 tbsp, Grated Garlic 2 tsp (use 1 tsp if you prefer less garlic), Whole Grain Mustard 2 tsp, Sugar 1 tsp, and Miso 1 tsp. Mix well.
  4. After the chicken has marinated for 10 minutes, evenly coat it with Potato Starch 2 tbsp.
  5. Heat oil in a frying pan over medium heat. Arrange the potato starch-coated chicken pieces in a single layer.
  6. Once the bottom of the chicken pieces has set and the edges are turning white, flip them over. Cover with a lid and steam-fry over medium-low heat for 2 minutes.
  7. Once the chicken is cooked through, transfer it to the bowl with the prepared sauce mixture. Mix well to coat the chicken thoroughly with the sauce.
  8. Plate the chicken and sprinkle with Dried Parsley if desired.
