- Green Onion 10cm
- Eggs 2
- Potato Starch 1 tbsp
- Ground Pork 100g

- [A] Dashi Powder 1 tsp
- [A] Soy Sauce 1 tsp
- [A] Sugar 1/2 tsp
Steps
- Rinse and loosen Boiled Soba Noodles (130g) under water, then drain thoroughly.
- Finely chop Green Onion (10cm) into small rounds.
- Crack 2 Eggs into a bowl and whisk them.
- Add the drained soba noodles, chopped green onion, Dashi Powder (1 tsp), Soy Sauce (1 tsp), Sugar (1/2 tsp), and Potato Starch (1 tbsp) to the bowl with the whisked eggs. Mix everything well.
- Place Ground Pork (100g) in a frying pan and cook over medium heat until browned. This step is key! Pre-cooking the pork ensures it's cooked through without worrying about timing.
- Add the cooked and browned ground pork to the soba and seasoning mixture from Step 4. Mix thoroughly to combine evenly.
- Using the fat rendered from the pork, heat the frying pan over medium heat. Add more oil if needed.
- Pour the mixed ingredients into the frying pan, forming a circle about 20cm in diameter. Cook until the bottom is golden brown. This is a crucial step! If it's browned and slides easily, it's ready.
- Carefully slide the browned mixture onto a plate, cover with the frying pan, flip, and return it to the pan. Reshape into a circle if it has collapsed.
- Cook the other side until golden brown.
- Cut the finished Crispy Pan-Fried Soba with Ground Pork into bite-sized pieces and arrange on a plate. This is where the magic happens! The soba will have a chewy texture and be incredibly delicious. Using the pork fat infuses the entire dish with flavor. The Japanese-style seasoning complements the soba perfectly, making it enjoyable on its own.
