- 300g Firm Tofu
- 15g Dried Daikon Strips
- 1/6 Carrot (30g)
- 1 Egg
- 2 tbsp Potato Starch
Seasonings
- 1 tsp Dashi Powder
- 1 tsp Soy Sauce
- Pinch of Salt
Steps
- Finely chop 15g Dried Daikon Strips using kitchen scissors or a knife.
- Briefly rinse the chopped dried daikon under water and drain well.
- Peel and finely dice 1/6 Carrot (30g) into 2-3mm cubes.
- Wrap 1 Firm Tofu block (300g) in a double layer of paper towels and place in a microwave-safe container.
- Microwave on 600W for 3 minutes.
- Carefully remove the paper towels (be mindful of heat) and thoroughly drain any excess water. *This is key!* Tofu will release more water when crumbled, so draining thoroughly is important.
- Transfer the drained tofu to a bowl and mash it with a fork or masher.
- Add the rinsed and chopped dried daikon to the mashed tofu and mix well.
- Let the mixture sit for about 10 minutes to rehydrate the dried daikon.
- After 10 minutes, add the diced carrot, 1 tsp Dashi Powder, 1 tsp Soy Sauce, Pinch of Salt, 2 tbsp Potato Starch, and 1 Egg to the bowl and mix everything together.
- Whisk the egg slightly and mix until all ingredients are evenly combined.
- Heat about 5mm (approx. 1/4 inch) of oil in a frying pan over medium heat.
- Once the oil is hot, scoop the mixed ingredients with a spoon, flatten them into round patties, and place them in the hot pan.
- Flip the patties once the bottoms are golden brown, and cook the other side until also golden brown.
- Remove the cooked "ganmodoki" from the pan and drain excess oil.
- Plate and serve. Enjoy!
