Ingredients

Main Ingredients (Generous batch)

  • Fresh Basil 20 leaves
  • Ground Sesame Seeds 1 tbsp
  • Toasted Sesame Seeds 1 tbsp

Seasonings

  • [A] Miso 4 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Cooking Sake (Rice Wine) 2 tbsp
  • [A] Sugar 1 tbsp
  • Sesame Oil 1/2 tbsp

Steps

  1. Remove the stems from 20 fresh basil leaves, roll them lengthwise, and thinly slice.
  2. Rotate the basil and chop further to a coarse mince.
  3. In a frying pan, combine 4 tbsp miso, 2 tbsp mirin (sweet rice wine), 2 tbsp cooking sake (rice wine), and 1 tbsp sugar. Stir well until dissolved.
  4. Once the seasonings are combined, mix everything with a spatula and heat over medium heat.
  5. When it starts to warm up and bubble, reduce the heat to medium-low or low to prevent burning, and cook until the mixture is glossy and thickened.
  6. Cook for about 2-3 minutes until the mixture is glossy, thickened, and slightly heavy when dropped. This step allows the alcohol to evaporate, creating the perfect consistency and binding the flavors together.
  7. Add the chopped basil, 1/2 tbsp sesame oil, 1 tbsp ground sesame seeds, and 1 tbsp toasted sesame seeds, and mix well. Adding the basil at the end preserves its aroma, and the sesame oil enhances the overall flavor.
  8. Mix everything together to complete the dish. Store in a boiled and sterilized jar or glass container, and consume within one week.
