No pizza dough needed! A healthy pizza recipe made with fried tofu and maitake mushrooms. Simply top fried maitake mushrooms and cheese on fried tofu and bake for a fragrant and flavorful masterpiece. Perfect as a snack or a side dish.

- Maitake mushrooms 1 pack (100g)
- Fried tofu (rectangular) 2 sheets
- Mixed cheese 30g
- Scallions (green onions), chopped, for garnish
Seasonings
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [A] Soy Sauce 2 tsp
- [A] Sugar 1 tsp
- [A] Dashi Powder 1/4 tsp
- Mayonnaise (to taste)
Steps
- Tear Maitake mushrooms (1 pack, 100g) into bite-sized pieces by hand.
- Sandwich 2 sheets of fried tofu between paper towels and press firmly to absorb excess oil.
- Cut the drained fried tofu into 4 equal pieces. This is the key! Cutting them beforehand makes them easier to eat and handle compared to cutting after baking.
- Lay the cut fried tofu pieces on a sheet of aluminum foil.
- Heat a frying pan over medium heat with a little oil.
- Add the torn maitake mushrooms to the hot pan and stir-fry, coating them with oil.
- Continue to cook, stirring occasionally, until the maitake mushrooms are golden brown and slightly charred. This is the key! Browning the mushrooms well enhances their aroma and umami.
- Once the mushrooms are softened and browned, add 1 tbsp Mirin (Sweet Rice Wine), 2 tsp Soy Sauce, 1 tsp Sugar, and 1/4 tsp Dashi Powder. Stir-fry until the liquid has evaporated.
- Spread the stir-fried maitake mushrooms over the arranged fried tofu pieces.
- Sprinkle 30g of mixed cheese evenly over the top.
- Drizzle mayonnaise in a striped pattern over the entire pizza.
- Grill or toast in an oven or toaster until the surface is golden brown and bubbly.
- Sprinkle with chopped scallions (green onions) to taste and serve. Enjoy!
