Chef Hidaka teaches us an authentic Italian pasta using crab sticks and broccoli. Achieves a rich flavor, reminiscent of sea urchin cream, with affordable ingredients. A surprisingly delicious and easy budget pasta recipe, directly from the chef.
Ingredients
Main Ingredients (2 servings)
- Linguine 100g
- Crab Sticks 100g
- Broccoli 70g
- Butter 10g
Seasonings
- Garlic (to taste)
- Tomato Sauce 150g
- Anchovies 1-2 pieces
- Chili Pepper (to taste)
- Heavy Cream 50g
- Extra Virgin Olive Oil (to taste)
- Salt and Pepper (to taste)
Steps
- Cut 70g broccoli into small florets and chop finely.
- Mince garlic (to taste).
- Heat extra virgin olive oil (to taste) in a frying pan, add minced garlic (to taste) and sauté until lightly browned.
- Add chili pepper (to taste) and sauté.
- Add 1-2 anchovy pieces and sauté well with the garlic until fragrant. (Key Tip!) Sautéing the anchovies with garlic enhances their aroma.
- Once fragrant, add 150g tomato sauce and sauté.
- While the sauce is simmering over low heat, flake the 100g crab sticks. Leaving some of the red parts intact will enhance the crab-like appearance.
- Continue to reduce the tomato sauce.
- Add 50g heavy cream to the reduced tomato sauce and continue to simmer.
- Boil plenty of water (not included in the ingredients list) in a pot, add salt (not included in the ingredients list), and start boiling 100g linguine according to package directions.
- About 3 minutes before the pasta is done, add the chopped 70g broccoli and cook together.
- Add the flaked 100g crab sticks to the sauce, along with a small amount of pasta cooking water, and mix.
- Add the cooked pasta and broccoli to the sauce. Add a little more extra virgin olive oil and pasta cooking water while mixing well.
- Season with salt and pepper (to taste).
