- Pork Belly 300g
- Cooked Rice (to taste)
- Sesame Seeds (to taste)
Seasonings
- Salt 30g
- Shio-koji 10g
Steps
- Shape the pork belly (300g) into a rectangular block.
- Rub salt (30g) all over the pork belly and massage it in well.
- Add shio-koji (10g) and continue to massage, ensuring it's evenly distributed.
- Let the pork belly coated with salt and shio-koji rest in the refrigerator for 2 hours.
- Place the pork belly on a plate, cover with plastic wrap, and microwave at 500W for 10 minutes.
- Continue microwaving in 2-3 minute increments, checking periodically, until the meat turns a brown color. (This is the key!) The cooking time can vary depending on the size of the meat and your microwave, so start with 10 minutes, then add 2-3 minute intervals while checking. Stop cooking once the meat turns brown.
- Let the cooked salted pork cool down to room temperature.
- Once cooled, thinly slice the salted pork, then finely mince it.
- Gently form warm cooked rice (to taste) into balls with lightly dampened hands.
- Gently mix the minced salted pork into the formed rice balls.
- Plate the onigiri and sprinkle generously with sesame seeds (to taste).
