Ingredients

Main Ingredients (For 300g Pork)

  • Pork Belly 300g
  • Cooked Rice (to taste)
  • Sesame Seeds (to taste)

Seasonings

  • Salt 30g
  • Shio-koji 10g

Steps

  1. Shape the pork belly (300g) into a rectangular block.
  2. Rub salt (30g) all over the pork belly and massage it in well.
  3. Add shio-koji (10g) and continue to massage, ensuring it's evenly distributed.
  4. Let the pork belly coated with salt and shio-koji rest in the refrigerator for 2 hours.
  5. Place the pork belly on a plate, cover with plastic wrap, and microwave at 500W for 10 minutes.
  6. Continue microwaving in 2-3 minute increments, checking periodically, until the meat turns a brown color. (This is the key!) The cooking time can vary depending on the size of the meat and your microwave, so start with 10 minutes, then add 2-3 minute intervals while checking. Stop cooking once the meat turns brown.
  7. Let the cooked salted pork cool down to room temperature.
  8. Once cooled, thinly slice the salted pork, then finely mince it.
  9. Gently form warm cooked rice (to taste) into balls with lightly dampened hands.
  10. Gently mix the minced salted pork into the formed rice balls.
  11. Plate the onigiri and sprinkle generously with sesame seeds (to taste).
