Ingredients
Main Ingredients (Makes a generous batch)
- Sugar 200g
- Soy Sauce 280ml
- Mirin (Sweet Rice Wine) 180ml
- Cooking Sake (Rice Wine) 80ml
- Sliced Pork (to taste)
- Cucumber (to taste)
Seasonings
- [A] Scallion 5cm
- [A] Ginger 3 slices
- [A] Garlic 1 clove
- [A] Star Anise 2-3 pods
- [A] Cinnamon Stick 5cm
- [A] Sichuan Peppercorns 1/2 tsp
- [A] Orange Peel 2-3 strips
- [B] Sweet Soy Sauce 4 tbsp
- [B] Finely Chopped Ginger 1 tsp
- [B] Grated Garlic 1 1/2 tsp
- [B] Finely Chopped Scallion 2 tsp
- [B] Chili Oil 2 tsp
- [B] Sesame Oil 1 tsp
Steps
- In a pot, add Scallion 5cm, Ginger 3 slices, Garlic 1 clove, Star Anise 2-3 pods, Cinnamon Stick 5cm, Sichuan Peppercorns 1/2 tsp, and Orange Peel 2-3 strips. Dry-roast over low heat without adding oil.
- Once fragrant, increase heat to high and add Cooking Sake (Rice Wine) 80ml. Bring to a boil to evaporate the alcohol.
- Add Mirin (Sweet Rice Wine) 180ml, Sugar 200g, and Soy Sauce 280ml. Bring the mixture to a boil.
- Once boiling, reduce heat to low and simmer gently for 20 to 30 minutes. The sauce will appear thin when hot, but will thicken as it cools.
- Turn off the heat and let it cool down.
- Strain the sauce through a sieve and store in a clean jar or bottle in the refrigerator.
- In a bowl, combine Sweet Soy Sauce 4 tbsp, Finely Chopped Ginger 1 tsp, and Grated Garlic 1 1/2 tsp.
- Add Chili Oil 2 tsp and Sesame Oil 1 tsp and mix well.
- Just before serving, stir in Finely Chopped Scallion 2 tsp.
- Arrange boiled Sliced Pork (to taste) on a plate.
- Garnish with thinly sliced Cucumber (to taste).
- Generously pour the prepared sauce over the pork and cucumber. Enjoy!
