From Wakiya Yuji's YUJI CHANNEL comes an exquisite Chinese dish featuring salmon and XO sauce. Delicate tofu absorbs the rich umami of the XO sauce, brought together by a creamy, runny egg. Ingredients

Main Ingredients (2 servings)

  • Firm Tofu 1 block
  • Egg 1
  • Green Onion (chopped) to taste
  • Potato Starch slurry 2 tbsp

Seasonings

  • Salmon XO Sauce 3 tbsp
  • Ginger (minced) 1 tsp
  • Taisaku Sesame Oil 1 tbsp
  • Cooking Sake (Rice Wine) 1 tbsp
  • Soup 100ml
  • Pepper to taste
  • Sesame Oil 1 tbsp

Steps

  1. Cut Firm Tofu (1 block) into bite-sized pieces.
  2. Place the cut Firm Tofu in a bowl and pour hot water over it to warm.
  3. Heat Taisaku Sesame Oil (1 tbsp) in a pot and sauté minced Ginger (1 tsp).
  4. Once fragrant, add Salmon XO Sauce (3 tbsp) and stir-fry.
  5. Add Cooking Sake (Rice Wine) (1 tbsp) and Soup (100ml).
  6. Add the warmed Firm Tofu to the pot, ensuring it's mostly submerged in the sauce.
  7. Cover with a lid and simmer over medium heat for 4 minutes.
  8. Taste and adjust seasoning with Pepper (to taste).
  9. Gradually add the Potato Starch slurry (2 tbsp) in 2-3 additions to thicken.
  10. Pour in the beaten Egg (1) and stir gently.
  11. Drizzle with Sesame Oil (1 tbsp) to finish.
  12. Plate the dish and sprinkle with chopped Green Onion (to taste).
