- Cooked Rice 250g
- Egg 1
- Citrus 30g
- Ginger 2 tbsp
Seasonings
- Citrus Juice 2 tsp
- White Sesame Oil 1 tbsp
- Salt (to taste)
- Pepper (to taste)
- Vinegar 2 tsp
Steps
- Peel the pith from the citrus and separate the segments by hand. Prepare 2 tsp Citrus Juice.
- Cut 2 tbsp Ginger slightly larger than rice grains and soak them in 2 tsp Vinegar until submerged. [This is the Key!] Soaking the ginger in vinegar enhances its refreshing flavor.
- Heat 1 tbsp White Sesame Oil in a frying pan and add 1 Egg, scrambling until half-cooked.
- Add 250g Cooked Rice to the half-cooked egg and stir-fry over medium heat, mixing the egg and rice together with a spatula until well combined.
- Once the rice and egg are integrated, season with Salt (to taste) and Pepper (to taste).
- Add the soaked 2 tbsp Ginger and 2 tsp Vinegar, and stir-fry over medium heat while mixing everything together.
- Drizzle a small amount of oil, add the separated 30g Citrus and 2 tsp Citrus Juice, and mix everything together with large motions to complete the dish.
