- 2 large fried tofu pouches (aburaage)
- 1 mochi cake
- 2 eggs
- 2 spaghetti strands
Seasonings
- [A] 150ml Water
- [A] 1 tbsp Soy Sauce
- [A] 1.5 tbsp Mirin (Sweet Rice Wine)
- [A] 1 tsp Sugar
- [A] 3 shakes MSG (Umami Seasoning)
Steps
- In a bowl, combine 150ml Water, 1 tbsp Soy Sauce, 1.5 tbsp Mirin (Sweet Rice Wine), 1 tsp Sugar, and 3 shakes MSG (Umami Seasoning). Mix briefly to create the sauce. This is the key step! The subtle balance of this delicious sauce is perfectly seasoned without being too sweet.
- Prepare 2 eggs.
- Break 2 spaghetti strands in half. These will act as skewers.
- Lightly oil a frying pan and spread the oil thinly with a paper towel.
- Cut 1 mochi cake in half. This is the key step! Using the base of the knife and applying firm pressure will allow you to cut smoothly.
- Cut 2 large fried tofu pouches in half crosswise.
- Use a chopstick to gently roll and flatten the fried tofu pouches. This is the key step! This prevents them from tearing and allows them to open nicely. If using good quality fried tofu, there's no need to blanch them.
- Carefully open the flattened fried tofu pouches.
- Place 1 egg inside one opened fried tofu pouch and close it by folding it in half, securing with the broken spaghetti strand.
- Place 1/2 mochi cake inside another opened fried tofu pouch and close it by folding it in half, securing with the broken spaghetti strand.
- Arrange the stuffed fried tofu pouches in the frying pan.
- Heat the pan over medium-low heat and sear both sides of the fried tofu pouches until they have a nice golden-brown color.
- Once both sides are browned, turn off the heat and cool the pan down by placing a wet towel underneath it. This is the key step! Adding water directly to a hot pan can damage its coating, so let it cool before adding the sauce.
- Once the pan has cooled down, add the prepared [A] sauce and bring to a simmer over low heat.
- Once the sauce is boiling well, cover the pan and simmer for 5 minutes.
- After 5 minutes, remove the lid and flip the fried tofu pouches.
- Increase the heat to medium-low and simmer until the sauce has thickened considerably. This is the key step! Reducing the sauce concentrates the flavor, resulting in a bolder taste.
- Once the sauce has thickened, turn off the heat and plate the dish.
