This healthy meat-wrapped lettuce is made in just 6 minutes in the microwave, no stove needed! The crispy lettuce, juicy pork, and melty cheese are coated in a sesame-scallion sauce that's incredibly addictive. Try this easy recipe perfect for busy days!
Ingredients
Main Ingredients (6 rolls)
- Lettuce 6-8 leaves
- Thinly sliced pork belly 6 slices
- Melty sliced cheese 3 slices
- All-purpose flour (for dusting) as needed
- Salt and pepper (for seasoning) as needed
Seasonings
- [A] Scallion (green part finely chopped) 8cm
- [A] Toasted sesame seeds 2 tbsp
- [A] Sesame seeds (for garnish) 1 tsp
- [A] Soy sauce 1 tbsp
- [A] Vinegar 1 tbsp
- [A] Sugar 1/2 tbsp
- [A] Lemon juice 1/2 tbsp
- [A] Sesame oil 1 tsp
Steps
- Cut sliced cheese into 2 equal pieces.
- Wash lettuce leaves and thoroughly pat them dry.
- Make a cut in the core of the lettuce leaf and spread it open.
- Place a halved piece of melty sliced cheese slightly off-center on the opened lettuce leaf.
- Fold in the core of the lettuce and roll it once to wrap the cheese.
- Fold in both ends of the lettuce and roll tightly to secure the roll. Place seam-side down. (Key Tip!) Lettuce can tear easily, but don't worry if it does; just keep rolling tightly.
- Season thinly sliced pork belly with salt and pepper to taste, then lightly dust with all-purpose flour.
- Tightly wrap the lettuce rolls with the floured pork belly slices, starting from the narrower end of the pork. (Key Tip!) Rolling tightly with the pork will prevent it from falling apart.
- Arrange the wrapped meat lettuce rolls on a microwave-safe dish.
- Loosely cover the meat lettuce rolls with plastic wrap and poke a few holes with a toothpick.
- Microwave on 600W for 6 minutes. (Key Tip!) Cooking time may vary depending on your microwave and dish size, so adjust to ensure the pork is cooked through. If using 500W, add an additional 10-20 seconds.
- While the rolls are cooking, prepare the sauce. Finely chop scallion (8cm).
- Place the chopped scallion in a bowl and add toasted sesame seeds (2 tbsp), sesame seeds (1 tsp), soy sauce (1 tbsp), vinegar (1 tbsp), lemon juice (1/2 tbsp), sesame oil (1 tsp), and sugar (1/2 tbsp). Mix well.
- Mix thoroughly until the sugar is dissolved to complete the sesame-scallion sauce. (Key Tip!) You can substitute this with 2-3 tbsp of ponzu sauce. For a punchier flavor, add minced fresh garlic and ginger to the sauce.
- Once microwaving is complete, remove the plastic wrap and generously drizzle the finished meat-wrapped lettuce rolls with the sesame-scallion sauce. Enjoy!
