Brighten up your weekend with this recipe for fluffy and melty soft-cooked Croque Madame and rich cafe au lait. Enjoy a satisfying brunch with a healthy, wheat-free tofu white sauce, thick-cut ham, and gooey melted cheese. A luxurious dish perfect for special occasions.

Main Ingredients (2 servings)
- Sliced bread 2 slices
- Tofu 1 block (300g)
- Milk 50g
- Ham 2 slices
- Melted cheese
- Egg 1
- Parsley
- Milk 200ml
Seasonings
- Butter 10g
- Consomme cube 1
- Pepper
- Nutmeg
- "Blendy®" Instant Coffee 2 tsp
Steps
- Mash 1 block (300g) of tofu with a whisk until no longer chunky.
- Add 50g of milk to the mashed tofu and mix until creamy.
- Add 10g of butter, 1 consomme cube, pepper, and nutmeg, then mix until smooth. (Key Tip!) Using soft silken tofu will result in a fluffy, melty, and mild sauce.
- Heat a skillet or frying pan and crack in an egg. Cook over high heat.
- Once the edges of the egg start to brown, reduce to low heat and stop cooking early to ensure a soft yolk.
- Place 1 slice of bread in the skillet.
- Spread a generous amount of the prepared tofu white sauce over the bread.
- Layer 2 slices of ham and melted cheese on top of the sauce.
- Place another slice of bread on top, and spread tofu white sauce on it as well.
- Top the tofu white sauce with plenty of melted cheese until it's mostly covered.
- Cook the Croque Madame in the skillet until the bread is nicely browned and crispy.
- Pour 200ml of milk into a milk pan and warm it until it's just simmering, without boiling. Remove from heat.
- Pour the warm milk into a cup and add 2 tsp of "Blendy®" Instant Coffee.
- Stir well to make the cafe au lait. (Key Tip!) Adding the coffee last enhances the milk's sweetness for a rich cafe au lait.
- Place the cooked soft-cooked fried egg on top of the baked Croque Madame.
- Garnish with parsley and pepper, if desired.
