Seasonings

  • Salt: 1 pinch to taste
  • Sesame Oil: 2 tbsp
  • Toasted White Sesame Seeds: to taste

Steps

  1. Thinly slice 2 large carrots diagonally, stack them, and cut into thin strips. (Key Tip! Leaving some pieces uneven in size, or thicker parts, creates textural accents.)
  2. Heat 2 tbsp of sesame oil in a frying pan and slowly stir-fry the julienned carrots over low heat.
  3. Continue to stir-fry slowly until the carrots have reduced by half to one-third their original volume, become tender, and their sweetness is fully developed. (Key Tip! It's crucial to stir-fry until the carrots lose their bitterness and become truly sweet.)
  4. Once the carrots are sufficiently sweet, add 1 pinch of salt (or to taste) and mix briefly. (Key Tip! Use a small amount of salt to maximize the carrots' natural sweetness.)
