Kou Kentei shares New Year's greetings and a recipe for "Heartwarming Portuguese-Style Risotto" during a live stream from his garden barbecue. Despite some technical difficulties, he delivers a simple yet comforting dish, sharing heartwarming moments with his family.
Ingredients
Main Ingredients (1-2 servings)
- Cod fillets, about 3 pieces
- Onion, 1/2
- Leftover rice, about 100g
- Tomatoes, 2
- Bay leaf, 1
- Garlic
Seasonings
- Salt (to taste)
- Olive oil (to taste)
- Grated cheese (to taste)
- Herbs (to taste)
Steps
- Chop 1/2 onion and 2 tomatoes into 2cm cubes. Cut 3 cod fillets into 4 pieces each.
- Heat a generous amount of olive oil (to taste) in a frying pan. Add 1/2 onion and garlic, and sauté.
- Once the onion is softened, add 3 cod fillets and 2 tomatoes and sauté.
- Add 2 cups of water and 1 bay leaf, bring to a boil, and simmer for 5-6 minutes. Add water as needed if it becomes too thick.
- Add 100g of leftover rice and simmer for a few minutes.
- Season with salt (to taste).
- Transfer to a bowl, and sprinkle with olive oil (to taste), grated cheese (to taste), and herbs (to taste). **Tip:** This risotto is also known as "Tears Soup," a dish Portuguese fishermen would eat to warm up after returning from the cold sea.
