Ingredients
Main Ingredients (2 servings)
- Yam 1 (approx. 300g)
- Garlic, thinly sliced 1-2 cloves
Seasonings
- Olive Oil 1 tbsp
- Soy Sauce 1 tbsp
- Coarse Black Pepper, generously
- Wasabi Paste, to taste
Steps
- Remove the germ from 1-2 cloves of garlic, thinly sliced.
- Add 1 tbsp olive oil and the deseeded garlic to a frying pan and heat over low heat.
- Gently heat the oil while infusing it with the garlic's aroma. Cook until the garlic turns golden brown. (Key Tip!) It's important to start with cold oil and cook slowly over low heat to prevent burning.
- Remove the golden brown garlic from the pan and place it on paper towels to cool. (Key Tip!) The garlic will continue to brown from residual heat, so remove it before it burns. It will become crispy as it cools.
- Prepare 1 yam (approx. 300g) with the skin on, and carefully remove any hairy roots. (Key Tip!) Grilling with the skin on enhances the savory flavor. You can peel it if you prefer.
- Trim off the ends of the yam.
- Cut the yam into bite-sized cubes, about 1cm square.
- Add the cut yam to the frying pan with the remaining garlic oil and stir-fry over high heat.
- Sear the yam until it has a nice golden-brown color on all sides. (Key Tip!) The key is to sear the surface until crispy over high heat while keeping the inside rare and crunchy. Be careful not to overcook, as it can develop a burnt flavor.
- Turn off the heat and add 1 tbsp soy sauce, mixing well.
- Transfer to a plate and sprinkle generously with coarse black pepper.
- Crush the prepared garlic chips and scatter them generously over the yam.
- Serve with a dollop of wasabi paste, if desired.
