No more feeling exhausted! Kou Kentetsu's 10-minute bento series answers your bento worries. This time, we'll show you how to make a salmon with cheese tartar bento and sesame green beans. This bento is packed with flavor, featuring glossy, perfectly cooked salmon and a rich cheese tartar sauce. It's the perfect 'no surprise' bento for busy mornings.

Ingredients

Main Ingredients (1 serving)

  • Salmon fillet (fresh or frozen) 1 piece
  • Green beans (fresh) 3 stalks
  • Whole kernel corn (canned) 2 tbsp
  • Processed cheese 1 slice (18g)
  • Onion, finely chopped 1 tbsp
  • Rice, for 1 person
  • Potato Starch (for dusting)

Seasonings

  • Salt (to taste)
  • Vegetable Oil (for cooking)
  • [A] Soy Sauce 1 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Vinegar 2 tsp
  • [A] Sugar 1 tsp
  • [B] Mayonnaise 2 tbsp
  • [B] Vinegar (a splash)
  • [B] Sugar (a pinch)
  • [C] Soy Sauce 1/2 tsp
  • [C] Sugar 1/2 tsp
  • [C] White sesame seeds, ground 1/2 tbsp

Steps

  1. Heat Vegetable Oil (for cooking) in a frying pan.
  2. Lightly season the Salmon fillet (fresh or frozen) 1 piece with Salt (to taste).
  3. Generously coat the seasoned salmon with Potato Starch (for dusting). [Key tip!] Using a bit more potato starch will give a better result.
  4. Place the potato starch-coated salmon in the hot frying pan. Using the sides of the pan, sear until golden brown on both sides. [Key tip!] Using the pan's sides helps to cook the skin and flesh evenly.
  5. Wrap the Green beans (fresh) 3 stalks in plastic wrap and microwave until tender.
  6. In a bowl, combine [A] ingredients: Soy Sauce 1 tbsp, Mirin (Sweet Rice Wine) 1 tbsp, Cooking Sake (Rice Wine) 1 tbsp, Vinegar 2 tsp, and Sugar 1 tsp to make the caramel sauce.
  7. Roughly chop the Onion, finely chopped 1 tbsp.
  8. Cut the Processed cheese 1 slice (18g) into small pieces.
  9. In a bowl, combine the chopped onion, cut Processed cheese 1 slice, [B] ingredients: Mayonnaise 2 tbsp, Vinegar (a splash), and Sugar (a pinch). Mix well to create the tartar sauce. [Key tip!] Using processed cheese instead of hard-boiled egg adds richness and a creamy texture.
  10. Once one side of the salmon is nicely browned, flip it and cook the other side until golden brown.
  11. Trim the ends of the microwaved green beans and cut them into bite-sized pieces.
  12. In a bowl, combine the chopped green beans, Whole kernel corn (canned) 2 tbsp, [C] ingredients: White sesame seeds, ground 1/2 tbsp, Soy Sauce 1/2 tsp, and Sugar 1/2 tsp. Mix well to make the sesame dressing.
  13. Wipe off any excess oil from the cooked salmon and turn off the heat.
  14. Add the prepared caramel sauce to the pan (while off the heat) and coat both sides of the salmon.
  15. Place Rice, for 1 person into your bento box.
  16. Arrange the caramel-coated salmon on top of the rice.
  17. Drizzle a little of the sauce over the salmon.
  18. Generously add the sesame green beans to the bento box alongside the rice.
  19. Top the salmon with a generous amount of the tartar sauce.
  20. Serve with any remaining tartar sauce on the side, if desired. [Key tip!] Allow the components to cool slightly before packing into the bento box.
