An easy-to-make milk & fruit sorbet using domestic milk and fruits, requiring only shaking to create. Proposed by Kensuke Kō as part of the JA Group's "Consume Domestic, Produce Domestic" campaign. It's perfect for a summer treat that you can enjoy making with children.
Ingredients
Main Ingredients (4 servings)
- Milk 200g
- Yogurt 200g
- Watermelon 250g
- Melon 250g
- Peach 1
- Chocolate chips (optional)
- Mint (garnish)
Seasonings
- [A] Sugar 3 tbsp
- [B] Sugar 2-3 tbsp
Steps
- Remove seeds from 250g watermelon and cut into chunks. Discard the white parts.
- Cut 250g melon into chunks.
- Remove the pit from 1 peach and cut into chunks. (Key Tip!) You can use your favorite fruits.
- Add 2-3 tbsp sugar to the cut watermelon and mash well. Add chocolate chips (optional) if desired. (Key Tip!) Sugar is less noticeable when frozen, so adding a little extra is recommended.
- Add 2-3 tbsp sugar to the cut melon and mash well.
- Add 2-3 tbsp sugar to the cut peach and mash well. (Key Tip!) Using ripe fruits works best.
- In a bowl, combine 200g milk and 200g yogurt, then add 3 tbsp sugar and mix well.
- Once the sugar is mostly dissolved, transfer each fruit sorbet mixture and the milk sorbet mixture into sealable bags.
- Seal the bags tightly and flatten the contents. (Key Tip!) Flattening the bags helps shorten the freezing time.
- Place in the freezer.
- Once the mixtures start to freeze slightly (become sorbet-like), take the bags out and knead the contents through the bag. (Key Tip!) This kneading process is crucial to prevent hard ice crystals from forming and to achieve a smooth, pleasant texture.
- Return to the freezer and chill until completely solid.
- Once completely frozen, scoop into serving bowls. Arrange the milk sorbet and each fruit sorbet side-by-side, like an 'aigre-doux' style. Garnish with mint (as needed) if desired.
