Seasonings

  • [A] Sugar 1/2 tbsp
  • [A] Soy Sauce 1.5 tbsp
  • [A] Whole grain mustard 1 tsp or more

Steps

  1. Peel 2 potatoes, remove any sprouts, and cut into half-moons.
  2. Heat 1 tbsp or more of olive oil in a frying pan. Arrange the cut potatoes in a single layer and pan-fry until golden brown on both sides. [Key Tip!] Slowly fry to bring out the sweetness of the potatoes.
  3. While the potatoes are frying, thinly slice 1/4 onion.
  4. Cut 150g of thinly sliced pork belly into bite-sized pieces and season with salt (to taste).
  5. Flip the frying potatoes and fry the other side similarly.
  6. After briefly frying the other side of the potatoes, add the seasoned pork and sliced onion and stir-fry.
  7. Once the pork changes color, add 1 clove of minced garlic and stir-fry, allowing the garlic's aroma to release in the pork fat.
  8. Continue stir-frying until the potatoes and pork are nicely browned.
  9. Add 1/2 tbsp sugar, 1.5 tbsp soy sauce, and 1 tsp or more of whole grain mustard. Mix everything together quickly. [Key Tip!] Sugar adds umami, while whole grain mustard provides a refreshing flavor.
  10. Transfer to a serving dish, sprinkle with coarsely ground black pepper (to taste), and it's done.
