- Salt (to taste)
- Coarsely ground black pepper (to taste)
- [A] Sugar 1/2 tbsp
- [A] Soy Sauce 1.5 tbsp
- [A] Whole grain mustard 1 tsp or more
Steps
- Peel 2 potatoes, remove any sprouts, and cut into half-moons.
- Heat 1 tbsp or more of olive oil in a frying pan. Arrange the cut potatoes in a single layer and pan-fry until golden brown on both sides. [Key Tip!] Slowly fry to bring out the sweetness of the potatoes.
- While the potatoes are frying, thinly slice 1/4 onion.
- Cut 150g of thinly sliced pork belly into bite-sized pieces and season with salt (to taste).
- Flip the frying potatoes and fry the other side similarly.
- After briefly frying the other side of the potatoes, add the seasoned pork and sliced onion and stir-fry.
- Once the pork changes color, add 1 clove of minced garlic and stir-fry, allowing the garlic's aroma to release in the pork fat.
- Continue stir-frying until the potatoes and pork are nicely browned.
- Add 1/2 tbsp sugar, 1.5 tbsp soy sauce, and 1 tsp or more of whole grain mustard. Mix everything together quickly. [Key Tip!] Sugar adds umami, while whole grain mustard provides a refreshing flavor.
- Transfer to a serving dish, sprinkle with coarsely ground black pepper (to taste), and it's done.
