Seasonings
- [A] Soy Sauce 3 tbsp
- [A] Vinegar 3 tbsp
- [A] Sugar 2 tbsp
- [A] Finely chopped red chili pepper 1
Steps
- Thoroughly wash 3 cucumbers with water.
- Trim off both ends of the washed cucumbers.
- Cut the cucumbers into approximately 4 pieces each.
- Insert chopsticks into the center of the cut surface of the cucumber pieces and make cuts at 3-5mm intervals, using the chopsticks as a guide. 【Key Tip!】 Making the cuts too fine will ruin the texture, so aim for about 3-5mm.
- Rotate the cucumber 180° and make cuts on the other side in the same way. 【Key Tip!】 This allows the flavor to soak in easily from the top, bottom, and center. It's okay if they split slightly; in fact, it helps the flavor penetrate better.
- Continue to make accordion cuts on the remaining cucumbers.
- Prepare a plastic bag (use two layers if the bag is thin) and add the accordion-cut cucumbers.
- Add [A] Sugar 2 tbsp, [A] Soy Sauce 3 tbsp, [A] Vinegar 3 tbsp, and [A] Finely chopped red chili pepper 1 to the bag. 【Key Tip!】 For an even tastier result, you can add sesame oil, olive oil, ginger, or garlic to your preference.
- Close the bag and knead thoroughly to mix everything well.
- Squeeze out the air from the bag, seal it, and place it on a tray to prevent leaks. Refrigerate for at least 3 hours to pickle. Flipping them halfway through will help them pickle evenly.
- Transfer the pickled accordion cucumbers to a serving dish. They are now ready! 【Key Tip!】 The pickling liquid is also delicious used as a dipping sauce for somen noodles or drizzled over rice.
