- Minced Garlic 1 clove
Seasonings
- Salt 1/2 tsp~
- Sesame Oil 1 tbsp

- Chili Oil (to taste)
Steps
- Trim off the ends of the cucumbers.
- Cut the cucumbers in half lengthwise, then into wide diagonal slices. [Key Tip!] Cutting them wide helps retain a crisp texture while allowing flavors to penetrate easily.
- Add 1/2 tsp~ Salt to the sliced cucumbers and rub firmly until they release moisture. [Key Tip!] Rubbing in the salt firmly prevents them from becoming watery and improves their texture.
- Let the salted cucumbers sit for a while to absorb the flavors.
- Finely mince the garlic.
- Firmly squeeze out excess moisture from the cucumbers by hand. You can also wrap them in paper towels to squeeze. [Key Tip!] Squeezing out excess water tightens the cucumbers and creates a great texture when stir-fried.
- Heat 1 tbsp Sesame Oil in a frying pan. Add the minced garlic (1 clove) to the cold pan and slowly release its aroma over low heat.
- Once the garlic is fragrant, add the dried cucumbers and stir-fry quickly over high heat. [Key Tip!] Avoid overcooking, as it will compromise the texture. Finish quickly over high heat.
- Transfer the stir-fried cucumbers to a serving dish.
