Addictive! Garlic cucumber that's perfect for hot days and delicious even when chilled. This versatile side dish pairs well with rice or as a snack. Enjoy authentic flavors easily with this cooking method that brings out the cucumber's crisp texture.

Ingredients

Main Ingredients (2 servings)

  • Cucumber 2
  • Minced Garlic 1 clove

Seasonings

  • Salt 1/2 tsp~
  • Sesame Oil 1 tbsp
  • Coarsely Ground Black Pepper (to taste)
  • Chili Oil (to taste)

Steps

  1. Trim off the ends of the cucumbers.
  2. Cut the cucumbers in half lengthwise, then into wide diagonal slices. [Key Tip!] Cutting them wide helps retain a crisp texture while allowing flavors to penetrate easily.
  3. Add 1/2 tsp~ Salt to the sliced cucumbers and rub firmly until they release moisture. [Key Tip!] Rubbing in the salt firmly prevents them from becoming watery and improves their texture.
  4. Let the salted cucumbers sit for a while to absorb the flavors.
  5. Finely mince the garlic.
  6. Firmly squeeze out excess moisture from the cucumbers by hand. You can also wrap them in paper towels to squeeze. [Key Tip!] Squeezing out excess water tightens the cucumbers and creates a great texture when stir-fried.
  7. Heat 1 tbsp Sesame Oil in a frying pan. Add the minced garlic (1 clove) to the cold pan and slowly release its aroma over low heat.
  8. Once the garlic is fragrant, add the dried cucumbers and stir-fry quickly over high heat. [Key Tip!] Avoid overcooking, as it will compromise the texture. Finish quickly over high heat.
  9. Transfer the stir-fried cucumbers to a serving dish.
  10. Garnish with coarsely ground black pepper (to taste) and chili oil (to taste) as desired. [Key Tip!] It's delicious not only freshly stir-fried but also when chilled. It's recommended to make a large batch and try both ways.
