- Cut the onion in half and trim the root. Chop into roughly 5mm thick pieces, cutting against the grain.
- Place the chopped onion in a bowl, add water and 1 tsp of vinegar, and mix lightly. Let it soak in the vinegar water for about 10 minutes to remove the sharpness.
- After 10 minutes, drain the onion thoroughly.
- Cut the bacon into 7mm to 1cm wide pieces. Cutting them in half, then in half again, is efficient.
- Heat a frying pan over medium heat and add the cut bacon without any oil. Spread it out and cook until it's crispy and browned, without moving it too much.
- Once browned on one side, flip and cook the other side. Turn off the heat once it's browned.
- Transfer the cooked bacon and any rendered fat to a dish.
- Peel the potatoes and remove any blemishes.
- Roughly chop the peeled potatoes into bite-sized pieces.
- Place the chopped potatoes in a bowl and soak in water for 5 minutes to remove excess starch.
- After 5 minutes, drain the potatoes, cover loosely with plastic wrap, and create one opening for steam to escape.
- Microwave on 600W for 4 to 5 minutes.
- After microwaving, remove the plastic wrap and check if the potatoes are cooked through by inserting a skewer. If they are still hard, microwave for an additional 1 minute at a time.
- While still hot, roughly mash the potatoes with a fork. You can mash them smoothly if you prefer.
- Season the mashed potatoes. Add 1.5 tsp of sugar and 2 tsp of vinegar and mix. 【This is the key!】 Adding them while hot allows the vinegar's acidity to mellow and the sweetness of the sugar to permeate the potatoes, making them delicious. Be careful not to add soy sauce or salt first, as it will make it harder for the flavors to absorb.
- Add the well-drained onion to the hot potatoes and mix, coating them. 【This is the key!】 Mixing with hot potatoes cooks the onion and removes its sharpness.
- Add the cooked bacon and mix everything together.
- Before adding mayonnaise, let the potatoes cool down sufficiently. 【This is the key!】 If you add mayonnaise when it's hot, it will separate, so always add it after it has cooled.
- While the potatoes are cooling, combine 1/2 tsp soy sauce and 1/2 tsp chicken stock powder in a heatproof container and microwave on 600W for 10 seconds.
- Mix well after microwaving to completely dissolve the chicken stock powder. Let this cool down as well.
- Once the potatoes have cooled, add 3 tbsp mayonnaise (adjust to your preference), the dissolved soy sauce and chicken stock mixture, and black pepper to taste (about two pinches), and mix everything together.
- Taste and adjust seasoning with salt to taste if needed. Add more mayonnaise if you want a stronger mayonnaise flavor.
- Transfer to a serving dish and it's ready.
