Satisfying even without additional ingredients! Ryuji's "Kyomu Abura Somen" is a super easy recipe that only requires boiling and stir-frying. By boiling somen for just 30 seconds and tossing it with oil, the noodles won't stick together, and you can enjoy a delightfully chewy texture. The deep flavor created by bonito flakes and seasonings makes this truly a supreme dish.
Ingredients
Main Ingredients (1 serving)
- Somen noodles 100g
- Bonito flakes 2g
- Vegetable oil 1 tbsp
Seasonings
- [A] Soy sauce 1 tbsp
- [A] Sugar 1 and 1/2 tsp
- [A] MSG(Ajinomoto) (MSG) 4 shakes
- [A] Sake 2 tsp
- [A] Sesame oil 1 tsp
Steps
- Bring water to a boil in a pot.
- Boil 100g somen noodles in boiling water for 30 seconds. 【Chef's Tip!】 Be careful not to boil for more than 30 seconds, as the noodles will lose their chewiness and won't taste good when stir-fried.
- Drain the boiled somen noodles into a colander.
- Rinse the somen noodles with cold water and squeeze out the excess moisture thoroughly.
- Add 1 tbsp vegetable oil to a frying pan and heat over medium heat. Once the oil is warm, add the squeezed somen noodles and stir-fry. 【Chef's Tip!】 Work quickly with the boiled somen noodles to prevent them from clumping together.
- To the stir-frying somen, add 1 tbsp soy sauce, 1 and 1/2 tsp sugar, 4 shakes MSG(Ajinomoto) (MSG), 2 tsp sake, 1 tsp sesame oil, and lightly crumbled 2g bonito flakes, then stir-fry to combine.
- Once the flavors are well combined, turn off the heat and transfer to a serving dish.
- Garnish with shredded nori, twisted sesame seeds, and chopped scallions, if desired. 【Chef's Tip!】 Twisting the sesame seeds as you add them enhances their aroma.
- It's also recommended to add chili oil for a change of flavor.
- If you're not stir-frying the boiled somen immediately, toss the squeezed somen noodles with 1 tbsp vegetable oil. 【Chef's Tip!】 Coating the noodles with oil will prevent them from sticking together for about several tens of minutes.
