  • Enoki Mushrooms 400g
  • Red Chili Pepper (Takanotsume) to taste
  • Scallions to taste

Seasonings

  • [A] Soy Sauce 3 tbsp
  • [A] Water 3 tbsp
  • [A] Oyster Sauce 1 tbsp
  • [A] Sugar 2 tsp
  • [A] MSG(Ajinomoto) (MSG) 6 dashes
  • [A] Vinegar 4 tsp
  • [B] Sesame Oil 1 tbsp

Steps

  1. Cut off the root ends of 400g enoki mushrooms as close to the base as possible. 【Tip!】 When cutting off the root ends, cut as close to the base as possible to leave more edible parts.
  2. Loosen the enoki mushrooms and place them in a storage container.
  3. Cover the storage container with plastic wrap and heat in a 600W microwave for 4 minutes.
  4. After heating, carefully remove the plastic wrap (watch out for burns) and discard any excess liquid that has come out. 【Tip!】 Discarding the liquid from the enoki mushrooms prevents the flavor from becoming diluted.
  5. To the container with enoki mushrooms, add 2 tsp sugar, 3 tbsp soy sauce, 3 tbsp water, 1 tbsp oyster sauce, 4 tsp vinegar, and 6 dashes of MSG(Ajinomoto) (MSG), then mix. 【Tip!】 Adding MSG(Ajinomoto) (MSG) mellows out the sharpness of the soy sauce and vinegar, making the flavor smoother. Be mindful of the salt content in oyster sauce; adjust if it tastes too strong.
  6. Add red chili pepper (Takanotsume) to taste (optional), 1 tbsp sesame oil, and scallions to taste, then mix lightly.
  7. Cover and chill in the refrigerator for at least 1 hour, then it's ready.
